Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the rolled oats, all-purpose flour, baking soda, salt, and ground cinnamon. Mix thoroughly to blend dry ingredients evenly.
  3. In a separate small bowl, whisk together the melted butter, honey, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently with a spoon or spatula just until combined; avoid overmixing to maintain soft, chewy texture.
  5. Fold in the raisins carefully to distribute them evenly throughout the dough.
  6. Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing each about 2 inches apart to allow spreading.
  7. Bake for 10 to 12 minutes, or until the cookie edges are lightly golden but centers remain soft for a chewy bite.
  8. Remove cookies from oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. Serve these honey oatmeal raisin cookies with milk or enjoy as a wholesome snack anytime!
  10. Store any leftovers in an airtight container at room temperature for up to 4 days.
