Tips

Equipment Needed

Use a large mixing bowl, a 9-by-13-inch metal pan, measuring cups, and a rubber spatula. A metal pan browns the bottom better than glass.

Ingredient Prep Notes

The dough should be sticky, so oil your fingers before dimpling instead of adding extra flour. Pat the corn dry so it roasts instead of steaming on top.

Oven Note

Bake on the center rack until the top and edges are golden brown. If the top browns too quickly, move the pan down one rack for the final minutes.

Easy Upgrade Ideas

Add grated parmesan, sliced jalapeno, or black pepper before baking. Serve warm with extra honey butter for a sweeter brunch-style bread.

Frequently Asked Questions

Can I make the dough overnight?
Yes. Let it rise slowly in the refrigerator, then bring it toward room temperature before stretching.
Can I use canned corn?
Yes. Drain it well and pat dry before topping the dough.
Why is my focaccia pale?
It may need a darker pan, more oil, or a few extra minutes in the oven.
Can I freeze focaccia?
Yes. Freeze slices and reheat in the oven until warm.

Ingredient Replacements

Use all-purpose flour if bread flour is unavailable, though the crumb will be softer. Frozen corn works if thawed and patted dry. Rosemary or chives can replace thyme.

Storage and Reheating

Store covered at room temperature for 1 day or refrigerate for up to 4 days. Reheat slices at 325 degrees F until warm.
