  • 1 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup honey
  • 1 large egg
  • 1 cup plain yogurt (or dairy-free alternative)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 1-2 teaspoons warm water (to adjust consistency)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg until evenly combined.
  3. In a separate medium bowl, whisk the honey, egg, yogurt, oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Using a wooden spoon or spatula, gently fold the mixture until just combined. It's okay if some lumps remain-avoid overmixing.
  5. Transfer the batter into your prepared loaf pan and smooth the top evenly.
  6. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  8. While the loaf cools, prepare the maple glaze: whisk powdered sugar and maple syrup in a small bowl. Add warm water 1 teaspoon at a time until the glaze is smooth and pourable but not too runny.
  9. Once the loaf is completely cool, drizzle the maple glaze evenly over the top.
  10. Slice and serve. Store leftovers in an airtight container at room temperature for up to 3 days.
